Why does a lager need to be cold?

The short answer most homebrewers learn first is: because lager yeast is a bottom-fermenting strain that evolved to work at low temperatures. This is true as far as it goes. But it leaves out most of the interesting history.

Before Refrigeration

Before mechanical refrigeration existed, cold fermentation was an accident of geography and season. Bavarian brewers in the fifteenth and sixteenth centuries stored beer in alpine caves, where temperatures stayed between 35°F and 50°F through summer. This cold environment strongly selected for yeast strains that could ferment slowly at those temperatures without producing the off-flavors that warmer fermentation would have generated in a less controlled environment.

The result was not a scientific preference. It was a survival strategy.

The Modern Situation

Today, a homebrewer with a chest freezer and a temperature controller can hold fermentation at 50°F with very little effort. But some commercial lager yeast strains — including the widely used Wyeast 2124 and Fermentis S-34/70 — are capable of producing clean beer at temperatures as high as 65°F under the right conditions.

This does not mean cold fermentation is wrong or unnecessary. It means the historical constraints that created the tradition no longer apply automatically.
